These can be severed plain, or with the addition of grated cheese to make a very cheap lunch or supper.
Preparation and cooking time: 30 minutes
Ingredients:
2-7 potatoes
Large knob of butter
2oz (50g) cheese (optional)
Salt and Pepper
2 eggs
Peel the potatoes, cut into thick slices and cook in boiling water, salted water in a saucepan for 10 to 15 minutes, until soft.
Drain and mash with a fork, then beat in the large knob of butter, using a wooden spoon. Grate the cheese, if used, and beat half of it into the potatoes. Season with the salt and pepper.

Grease an oven-proof dish. Spread the potatoes into this, and make a nest for the eggs. Keep it warm. Boil 1 in (2 ½ cm) water in a clean frying pan and poach the eggs. If making cheesy eggs, heat the grill. Carefully lift the eggs out of the water when cooked and put them into the potatoe nest, if making plain eggs serve at once, otherwise cover the eggs with the remainder of the grated cheese and brown for a few moments under the hot grill. Can be served with a fresh tomato or a salad.

Thats a great recipe will check it out, I love anything potatoes :) with eggs it will make a great combination. Is this a South African specialty?
